Primo was the first Sicilian extra virgin olive oil to obtain the Monti Iblei DOP (Controlled Origin) certification. Today, it is one of the most sought-after and prized. Because in the kitchen, more than a condiment, it can be considered a true food: it is an intense, robust, and fragrant oil, suitable for hearty first courses, meats, and legumes. It enhances grilled fish, soups and salads, bruschetta, and Caprese salad. And its intensity defines the destiny of every dish.
Origin
Made in Italy. Primo DOP is produced on the Iblei Mountains, at 350-450 meters above sea level, from centuries-old DOP certified olive groves. facing south. Mainly Tonda Iblea variety.
Extraction
Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled “cold” temperature (below 27 degrees).
Perfume
Intensely fruity with pronounced notes of green tomato, freshly cut grass and fresh aromatic herbs.
Flavor / Aroma
