    Trento DOC Balter Brut Riserva: sparkling wine obtained following the Champagne method, Chardonnay 80% Pinot noir 20%. Since from first operations, Nicola Balter tries to give an original print to the products. Even if the harvest is quite late, the acid support in granted by microclimate, thus allowing the achieve of a maturation degree ideal to confer taste, structure and long refining bias to the product. Pris de mousse is achieved through a slight lower atmospheric pressure than standard, this allow to drink Balter Brut during all the lunch or dinner and not only during a special moment. Notwithstanding 7 long refining years, is able to keep a colour highlighting brightness and brilliance; straw yellow, chic perfume, chocolate and laurel nuances are just a little part of the values belonging to this product. This wine has everything you should expect from a successful Champagne: complexity, refinement, fine balance and brightness.

    The fledgling of Casa Pedrotti. Pedrotti Bouquet is a fresh mountain-grown Metodo Classico TRENTO DOC spumante born in the Dolomites. It is a Blanc de Blanc obtained entirely from Chardonnay grapes and destined to please as an aperitif or as an accompaniment to delicately flavoured dishes. Pedrotti Bouquet is produced according to the classical bottle refermentation method, in compliance with the TRENTO DOC protocol. Second fermentation occurs in the quiet darkness of our splendid rock grotto, a one of a kind cellar with a unique microclimate indispensable for the slow ageing process of this spumante and its fine perlage. Elegance and freshness are its defining characteristics.
    Varieties 100% chardonnay, hand-picked; Ageing minimum 20 months of ageing on own yeasts; Sensory characteristics: Colour Sparkling, straw-yellow with greenish hues; Nose Intense and of fine quality; fresh floral and fruity hints of white fresh fruits, mineral notes; Palate Dry, but with slightly enveloping notes, good acidity that exalts its freshness, clear mineral notes that enhance its sapidity; Perlage Fine, spirited and persistent; Alcool 12,5%; Sugar 10,00 g/l.

    Produced using the traditional method with a second fermentation in the bottle, Pedrotti makes this wine in limited quantities using Chardonnay and Pinot Noir grapes grown on the highest, sunniest hilltop vineyards of Trentino. TRENTO DOC represents the jewel in the crown of the broad selection of Trentino wines. Produced with the traditional method, abiding by the regulations of TRENTO DOC. The fine, dry flavor is finished by a fine and persistent perlage. Elegance and fresh crispness are two of its most marked characteristics. Perfect as an aperitif, with shellfish appetizers or paired with seafood dishes.

Thirty long months of ageing on the lees are required to make TRENTODOC Rosé by Casa Pedrotti. It is produced with the traditional method, abiding by the regulations of TRENTODOC. Fine and persistent perlage, pale pink color. The fine flavor is crowned by a fresh elegance that is truly unforgettable.

    Grape variety: 100% Moscato. Moscato is a aromatic white grape variety which is the most diffused in the world. White sparkling wines are produced from this grape, which is easily identified by a clear and marked organolectic imprint. Origin: vineyards in the Treviso countryside, surrounded by the Sile and Piave Rivers. Winemaking: once the grape has reached peak and balanced maturity, harvesting can begin. The grapes delivered to the winery, are separated from the stems and pressed, the must being separated from the skins during this process. The cooled must is then decanted and filtered then stored at 0-2°C. Storage and ageing: best stored in a cool and dark cellar – note that it’s peak aromatic freshness is espresse within the first year of bottling. Colour: to the eye, a nice level of froth is apparent, a good tone of yellow with delicate notes of green is noticeable. Brilliant and lively in the glass. Bouquet: to the nose, the impact is elegant, delicate, fragrant, clear notes of orange, apricot, peach and rose are perceived. Flavour: excellent introduction highlighted by the carefully balanced perlage which incorporates the sensations of sweetness, acidity nd salinity.
    Alcohol content: 7,50 % vol.

    Grape variety: 85% Pinot Nero, 15% Raboso. Origin: vineyards in the Treviso countryside, surrounded by the Sile and Piave Rivers. Winemaking: after a brief contact with the grape skins and cleaning of the must, temperature controlled fermentation at 16.5°C takes place for 90% of the production whilst the remaining 10% ferments in new barriques. In January, the cuveè is then prepared and the base wine is put into autoclaves, where the fermentation ends. The wine then rests for a further 6 months at a temperature of 4°C before being bottled. Storage and ageing: in the cellar, at controlled humidity and a temperature of 10-12°C. It is recommended that it is drunk young. Colour: rosé with delicate, sparkling highlights. Bouquet: pleasing, light, floral and reminiscent of small red fruits. Flavour: dry and velvety, fresh, lively and fruity with nuances of small red fruits. Firmly structured and supported by the black skin of the grape made in rosé.
    Alcohol content:  12,00 % vol.
    Optimal serving temperature: 8-10 ° C.
